Seems to simply be an ability of Windows to allow multiple displays if your video cards support it, and provide a fake "screen resolution" of 3072 x 768 for example (3 x the witdth, 1x the height) to software running under it.  Basically, Windows stretches your screen, not SWTOR.

Note that SWTOR does NOT allow you to move UI elements, and also I haven't seen the ability to change the viewing "angle" so that the side displays aren't super-deformed.  It's why his screens are in front of him, instead of wrapping around him like the windows of a car; the side images are very deformed/stretched extensions of what's in front of his character, NOT what's to the left / right of his character.

Incidentally, if you set up the Windows desktops to have 3 separate desktops instead of 1 stretched one, and you run SWTOR in full screen mode in the center screen, with map and spoiler websites on the left and right, the game allows you to move the mouse outside the SWTOR screen area, but the moment you click a link or anywhere outside, it gets minimized and you get dumped to the character select screen.  Misclicks suck.  I also never realized just how much I rely on the mouse cursor stopping at the edge of the screen even if I continue to move the mouse.  Trying to click action bars is super-hard when your cursor disappears to the side screens.

EVE supports multiple screens from inside the game.  You can actually have 3 accounts, each running on its own screen, just fine.  Or, you can span the view but move the interface elements to the center or whatever.

EDIT:  Each video card has 2 video outputs typically, so to run that you need 2 cards in SLI or cross-fire mode.

"Fullscreen- Windowed" mode fixed this for me.   However I'm running as a stretched desktop, not 3 separate.
