That's cause in almost all places outside of Japan hot sake is the lowest quality sake you can drink. The best sake you can reasonably find outside of Japan is/should be served cold. High quality sake is usually quite pricey too.

Oh. I tasted the hot kind only once and wondered why anyone would think that tasted okay. I just sort of reckoned they had a medical issue or were heavy smokers. I've never tasted cold sake.

Most security cameras are ip based these days and are fairly easy to setup. Keep in mind that decent HD cameras ones are not cheap and can run over a thousand dollars.

For that price range I would recommend one of the Wakatake Onigoroshi ("Demon Slayer") sake's. Should be relatively easy to find. There are different styles of that brand with varying prices. I suggest either the Junmai Daiginjo (most expensive) or the Junmai Ginjo (somewhat less expensive). If you want to spend a little more I would recommend Ken as a popular relatively high end sake (in the US market) that's still relatively easy to find.

My sister and brother in law like sake. I'll try to find that when I go back to the US at Christmas but I'm not entirely convinced it won't taste like cold earwax.

I have to chair a faculty search committee. Ugh... two days wasted with phone interviews and then a week or two of onsite interviews. Job interviews in academia are so stupid long. Can you imagine a job interview that lasts two days? Day 1: 7:30 am - 8pm. Day 2: 7:30 am - 5pm. All for a shitty paying position.
