Y'know, the only problem I have with seeing Yeast that much in a brewing article is that it reminds me on a semi-conscious level I'm drinking fungus piss. Kind of ruins the whole beer experience sometimes.

The guy's not onto anything that revolutionary. Back in the 1500's, brewers didn't even know yeast existed. All they knew was they tossed the wort into a big wooden cask and it fermented. The cask usually was never cleaned out; it was essentially a giant yeast farm that was reused over and over. Really not that different from what this guy's doing.

Read a story in the WSJ today about a Japanese brewer who made some ancient Egyptian beers based off hieroglphyics found in old ruins... One had the consistency of yogurt....um no thanks...

Read a story in the WSJ today about a Japanese brewer who made some ancient Egyptian beers based off hieroglphyics found in old ruins... One had the consistency of yogurt....um no thanks... Yeah. Years ago I read an article about a guy who brewed a beer that was close to what the first beers, in the middle east, were like. Those old beers were a sort of combination of beer and bread - like dough in liquid. They weren't carbonated, had no hops, and were sweet. Doesn't sound refreshing, but does sound nourishing. You could probably live on oldschool beer alone.
