It seems to me that cows are about three steak dinners away from extinction.  A really big weekend on the part of humanity could wipe them out entirely. They seem far more endangered than the other two.

Actually in that case I'm pretty sure cows would be saved by capitalism. If we had one weekend, planet wide orgy of steak eating the farmers with cows left would be charging a pretty hefty premium for what they've got. Of course we might just go fuck it, meat tastes good and keep on chowing down but then we're just as likely to go, "Fuck it, I want to be able to safely go for a walk in the African Savannah. Let's wipe out the lions and hippos."

Wouldn't happen.  Some ranchers would see the goldmine of holding onto stable herds while everyone feasts on steaks, and it's not like you could get mobs of people competent enough to roam the billions of acres of ranch land needed to kill every last cow.  You'd probably lose more city folk than cows to that horde.
