For functional war and economy, travel must not be trivial. Non-trivial travel is boring. There are somethings you can't design away.

Some of the rolling / maneuvers shown there would only be possible in-game with a joystick control scheme, and we don't have that in EVE, which is why it falls so short of what those movies show.

Also, the main thing that makes it cool is the cinematography, and I don't see how you could ensure that in a game, certainly without limiting the player's tactical options.
Otherwise it's pretty close to the game, leaving aside the quality of the graphics.

Maybe I'm just a pubbie roleplayer but I really want to sit down sometime and read all of the EvE history I can find.

It's mostly the ranges of engagements and the camera placement that make the difference here.
these video bits have camera sitting right on top of the ships, as they duke it out at 1-2 km ranges or less. It brings the sense of speed and scale these ships have into much sharper focus.
In-game people are fighting at 20-200 km ranges and camera is some 10km farther out, often way way farther. That reduces battle to something like that bit in Return of Jedi when while in Emperor's chamber you can occasionally see some small dots light up in space behind him.

Half the fights I have been in, I was at 195km and my camera was three or four thousand km further away. It was just watching a ball of red squares and hoping they all didn't start to flash at once, with everything else done off the instrument panel and overview. These days, with a high-end PC and lag so much more manageable on the server side, too, I occasionally turn effects on and brackets off in big fleet fights, then zoom in to 100km or so. Seeing two, three or even four separate battle-lines drifting along in space with tacklers darting out towards the enemy, missiles streaking across the gap and laser-beams criss-crossing the void is pretty close to awesome, and matches my sci-fi-fuelled childhood dreams about "space battles" perfectly (Jutland in space).

Another reason I much prefer the small gangs over fleet fights. I play on a high-end PC and constantly have graphics & effects up full, so I get a pretty spectacular view. Only way to play IMO.
