Icing. You can make your own or buy it in one of those Gingerbread House kits. We flip back and forth between totally-custom and store-board each year. Not sure how he built the structure, not having read through all the comments nor sought the Helms Deep bit. But that, too, could have been gingerbread if they were looking for total edibility, or just straight up cardboard or plastic. Depending on how long they were expecting this to last (assuming longer than just the time it took to photograph), I'd go with something that wouldn't decay with all that icing moisture.

I think more like sugar and wax. But mostly wax. If you like candy corn, just stick your finger in your ear and then lick it. Or eat one of those aromatherapy candles. They smell better, anyway.

Different wax, but yes.  Sugar, Corn Syrup, Honey and someimes Carnuba Wax for gloss. (Although I could have sworn some use beeswax...)

I don't know that we have an actual name for flavored popcorn over here.  There's specific brands and combinations like "Cracker Jack (caramel, popcorn and peanuts) and "Crunch & Munch" (toffee, peanuts and popcorn) and a few other variants but I dunno about flavored corn.  Hell, I don't even know that it's regularly available in places around here anymore, as the last time I saw watermelon, apple or bubblegum popcorn was in a mall store 5 years ago.

On the further topic of sweets, I found this recipe. Enjoy.

Party Popcorn Cake
1/4 c. butter
1/4 c. oil
1/2 lb. marshmallow (about 2 1/2 c.)
20 caramels (about 1 c.)
1/2 lb. salted peanuts (without skins or mixed nuts) (honey roasted nuts)
10 c. popped corn, lightly seasoned
1/2 lb. M & M's (or diced gumdrops)

In microwave oven or on top of stove melt together butter, oil, marshmallows and caramels. Place popcorn and peanuts in LARGE mixing bowl. Add melted ingredients and stir together until popcorn and peanuts are evenly coated. Add candies last.

Press firmly into oiled 12 cup Bundt pan. Let stand until firm and completely cooled (room temperature). Remove from pan. (After popcorn cake has been removed from pan, the Bundt pan can be placed over the cake to serve as a cover.) For easier slicing, let stand overnight.
