It's not often referred to as "Canadian Bacon" in Canada, that's what you Americans call it for some reason.  We normally just call it back bacon or peameal bacon.

I imagine it's sort of like how people in Scotland don't usually call whisky scotch, they call it whisky.

Fuck people, we call it Back Bacon. We use it as a substitute for ham in fried situations, like on an eggs benny for example. We call side bacon...  Bacon!

Since we are discussing bacon, I will chip in my opinion on it: No one ever cooks it enough. If I pick up a piece by one end, it should not bend. It should be crispy, but not quite burnt.

I have no standards for bacon, besides being cooked over 140F. I'll wrap bendy bacon around crisp bacon and sprinkle crumbs of burnt bacon over the top.

I told my fiancee she needs to have supper with me every night. I cook normal stuff when she's around. When it's just me I cook stuff like a bacon-topped rib steak with pan sauce and pepper jack cheese. It's carnivore night!

Heh....I printed out the linked page at the beginning yesterday to show our chefs. Our executive chef decided to make some miniature bacon cups with a southwestern egg souffle.

I did not get a chance to try them, but apparently they went over well with the "tasting department".

People had to do it back in the day out of necessity though; I guess it's just a lost skill. I honestly wouldn't know how you actually cure meat.

So I made some of these tonight.  Filled it with shrimp that was cooked in a lemon/butter sauce, then cut up.  Mixed the shrimp up with gouda cheese grits, with a bit of finely chopped onion.  Topped with Tony Chachere's Cajun Creole seasoning.

ZOMGGOOD.

I think I'm going to be sick.

Bacon cups sound great, but this could mean bacon would replace bread as the acknowledged vehicle for meat as cheese. This must not happen.

There are levels. It's not really difficult, but of course you want to watch out for rancidity when curing anything with fat.

Jerky, which uses lean meat, is extremely easy to cure and I've been making it since I was a kid. In fact, I need to make another batch soon.

Just to revive an old thread... My wife came back from a trip to NYC the other week and brought me one of these:

While maybe not everyone's cup of tea I found it to be absolutely delicious. Excellent quality chocolate, slightly salty, with small pieces of applewood smoked bacon. I would highly recommend it and am now considering ordering more online.

That's actually an old one.

Also, Nicholas Gurewitch pretty much canceled PBF to work on other things.  He said he wasn't going to fully kill it, and that he would make new strips as he felt the need.  However, he's only added like, 3 strips in 6 months, so it's effectively dead.

First installment of the bacon of the month club came the other day.... the applewood smoked bacon.  Now, I've had applewood smoked bacon before at delis and such.  But not like this.  Holy crap it was magical.  Super lean and the aftertaste was like a light, pleasant campfire smoke.  It's truly the best bacon I've ever had in my life. 

Is it worth $30 a lb?  Well, no.  I'm sure there's a butcher/deli in most major cities that can get similar meats.  It's hard to complain since it was a gift... I wouldn't personally buy it for myself as it's out of my price range, but if I had indispensable wealth I'd buy it weekly.
