The answer's always a multiple of 9.  Check the key and look at all the multilpes of 9.  Note that when you reload the assignments change, so the winning symbol changes.

Edit: why it's always a multiple of 9:
Subtracting the sum of the digits from the number is equivalent to subtracting the ones digit and then the 10s digit (x - (y + z) = x - y - z), subtracting the ones digit from a number always results in a multiple of 10, so you're subtracting the 10's digit from a multiple of 10.  This is equivalent to (x * 10 - x) for all numbers in the range, or x * (10 - 1), or x * 9.  Bunnies are funny.
