We subscribe to Cooks simply because I found myself picking it up anyway. I find myself going more and more to the website. I appreciate the modern take on scientific cookery. I don't find the website as useful as I thought I would. I don't really want the recipes as much as I want the background of we try this that and the other and this is why we think this works the best.
We used to sub to the Economist and I really like it, but I just don't have the time or inclination to read that much anymore. If we're ever on vacation tho, there's usually a last minute run to the news stand for it.

Numtini, have you tried any of their cookbooks? You can get some great deals if you wait for the sales, I never pay more than 50% for them. They do have a lot of the theory and testing info in the cookbooks. Be cautioned that they will sign you up for a book club thing, really pissed off my fiance, even though it's easy to opt out of and you can just return the book if you don't like it. I was in the book club before I bought the house and just had fun using the book for a week and sending it back :)

The best stuff in Cook's is the explanation of why things work + the product reviews, yes. It's a bit like one of my favorite food books I have nestled in with my cookbooks, called Kitchen Science, which I think was reprinted recently--explains why a number of cooking processes work the way that they work, which in turn lets you understand why you're doing what you're doing while cooking (and where you might be able to do something differently in a useful way). I just think the magazine is mishandling its relationship to online content, but they're hardly alone in that respect. If they got their heads on straight about that and Christopher Kimball was kept away from a word processor, I'd probably resub.

I still pick up White Dwarf, more out of habit than anything else. Occasionally Empire (film review) which we used to get monthly, but now only now and then. Sometimes Ralph or FHM to read on the toilet. Through work I get Australian XBox 360, Hyper, and some Dirt Bike thing I can't remember the name of, but they only half-count.

I usually pick up Empire (primarily for reviews and features, I get my news off the internet) for general movie goodness, and ImagineFX for digital art tips, inspiration and tools. Once in a while I'll pick up Edge, but since I primarily use my PC to game with, it doesn't have much in it to really interest me anymore beyond the developers ads. Maybe start picking it up more regularly again when I get a PS3. I figure Empire & Edge are pretty easy to get in the US but no idea about ImagineFX, it's a bit niche.
