Food Network, motherfucker!

Alton is the shiznit. I love the little silly gadgets he shows off, like the dinosaur-headed water bottle. My wife covets his gadgets.

Heh.

Here is a foxier picture of him that I pulled from the recipe thread (after I concurred that this thread should exist).

Remember how rough-around-the edges he was in the beginning? Awww... Catching the occasional old-ish episode of Good Eats reminds me of that. You've come a long way, baby!

I remember one of his shows where he was cooking something big like a brisket or turkey or something like that. He was complaining about ovens not having even cooking. Some areas in the oven are hotter than others. His solution: Get a giant clay flowerpot, turn it upside down, and and cover the entire pan with it. The oven would heat the clay pot unevenly, but inside the pot the heat would raidate evenly on the food.

He posted this rant on his website (http://www.altonbrown.com):

Please, I’m crying out for help.

He can't be a real chef, since he doesn't own one of these:

Its called a römertopf and has been in European kitchens for ages (I have an antique bought for $5 at a market). It wasn't invented by some American whippersnapper with a tv-show.
The french use a cocotte.

But I do like me a good cooking show and kitchen gadgets... so somebody send me a dvd...

If you knew anything whatsoever about AB, you'd know that he HATES what he refers to as "unitaskers", that is, instruments good for only one thing. The flowerpots are way cheaper, just as functional, and are multitaskers. He recommends, whenever possible, saving your money and getting tools that also function as hardware (e.g., fine rasp instead of a zester or microplane).

"The only unitasker in your kitchen should be this:"

I think it was clear from my post, that I don't. His show hasn't jumped the pond to where Im at.

I would agree with the general sentiment when referring to useless stuff like eggcookers or popcornmakers, but since I don't own any large flowerpots, would never put food inside something I'd used for dirt prior and the other way around (using the pot in the oven, then for plants) would mean I'd have to keep buying pots, I don't see how his way is cheaper... unless he only uses the same flowerpot in the kitchen, in which case it's a unitasker and the dedicated tool would be better suited...

I also once used my dads weedburner to make Creme Bruleé, but I do prefer my small - unitasking - kitchen gasburner... it could be used in the garden, if you have forever, but is a bit easier to drag around in the kitchen.

I have found memories of using the acetylene torch to cook lunch when we were building grain bins in Nebraska.  Now that is a multi-purpose tool.

And also for illustrating some of the finer points of cooking with the use of barbie dolls and sock puppets.

Alton's show is called Good Eats (and pardon me if that had already been stated.) Food Network sells DVDs, but they're horribly overpriced and I believe you can only buy themed sets; there are no "season boxes" available, so all of the episodes are not on DVD.

But that's OK, because you can still find each season wrapped up in a neat package if you look around. I'd bust out a direct link for you, but I don't think the mods would appreciate that. Try a search for "digital distractions."

Even if you aren't that interested in cooking, Good Eats is a pretty damn enjoyable show.

I must contribute to the Alton Brown love.  His show is awesome.  I went to one of his book signings over in Berkeley a few years back and almost threw my underwear at him like a screaming groupie.  He's exactly the same in person and impromptu as he is on his show.

Those would be links to the aforementioned 'themed sets', which as stated, do not contain all the episodes.

What was being suggested in the second paragraph was that collections of all the episodes can, in fact, be found if one looks in the right place.  The fact that procurement thru such means isn't exactly legal is why he can't post links.

So, the 1st season finally appeared on my harddrive (as if by magic) and I just watched the two first episodes.
I can't say I learned a whole lot of new stuff, but the guy's really good.
I like the way he covers the basics and steers away from recipes. The magazine right next door to mine is a cooking magazine - I'll get the editor on buying all the official releases. There's a lot of stuff to steal be inspired by - and then I get to borrow the sets.

I'll be using the techniques from his beef jerky episode to fashion a food dehydrator this fall, when the chantrelles and oyster mushrooms are in full effect. It's hard to be that creative when you have like 20 pounds of choice edibles that don't freeze well. Dehydration ftw!

Just saw that through the wonder that is TiVo a few nights ago. I am not an energy bar kind of guy, but it was really interesting stuff. I like his work on ICA too- the chefs seem to like him and find his comments amusing.

I just made the beef jerky this weekend,  turned out top notch!    Though I had to run it on the fan for closer to 24 hours. It might have been due to letting is set in the flavoring liquids for too long ( like 12 hours)  or the fact my fan didn't measure up to the blow hard 3000.

I saw the chili episode.  He wore a fake mustache the whole time and talked funny.  This past weekend I saw the pancake episode, and he looked far more normal.  Turns out that he and I got some of our stainless steel measuing tools at the same store, so points for him.

Jumping in a tad late to say I too  Alton Brown.  I saw him remake a kitchen that was absolute perfection.  It was interesting to learn that he used to be a flim student that decided to go into the culinery arts instead and used what he knew of video to create the unique filming of his show.  I also love how his love of the science of food translated over so well.  I'm addicted to watching him when I come across the show.

This thread plus glowing recommendation from some friends who are outstanding cooks led me to buy Alton's book.

It's great so far. Cooking is treated as a science. The theory gets as much emphasis as the procedural instruction. Good stuff so far. I can't wait to make my first SOUFFLE!
