Did you play Grimrock? Imagine Grimrock with the auto-map feature off. You could technically play the game without creating maps, but that would require some crazy memory skills for dungeon layouts. My last experience with grid-paper mapping was Bard's Tale 1-2. At that time I swore I'll never play a game without a functional automap again. It doesn't fill in the walls but it does fill in the places you've walked. At least in the demo I walked around an area then filled the lines in at the end, was pretty simple.
