EDIT for sound card... I haven't dug into my parts graveyard to see what I have, but I think the chances of having an old sound card are slim since sound cards are why I hated DOS gaming so much. I'm hoping for a more elegant solution. Most sound cards are going to have game/MIDI ports, if you've got integrated audio on the mobo you may even have a jack to connect one somewhere. Lots of synthesizers and other old-style MIDI equipment still out there. It actually started out as a MIDI interface, joysticks were an add-on.
