Maybe I have been living under a rock, but I found this quite surprising...
Also, MSG isn't bad for you?!?

It's the salt of a common acid.  Bad for you? Not really.  Can it make you feel badly?  Yes.  Glutamate is a neurotransmitter.

Glutamic acid is ubiquitous and makes everything taste better. Haven't we had this discussion before? The Japanese have known about (and invented) umame like 50 years ago.

The Japanese didn't invent it since it's a component of soy sauce (among other things) which they brought over from China. They were the first to identify the chemical scientifically one hundred years ago, though, and they use it much more extensively, even in historical times, since it's a prime component of kombu (a type of seaweed) which they use to make dashi, their version of the West's chicken stock.

They invented the concept that it is one of the "tastes" (like sweet, salty, sour and bitter).
